A dough enhancer merely gives a little longer life to your bread. It is a homemade preservative of sorts.
Here is the recipe that I use:
4 cups powdered milk
3/4 cup lecithin (you can get through a health food store or a local cooperative)
3 Tbsp. vitamin C crystals or powder (health food store, too)
2 Tbsp ginger (ground)
3 Tbsp cornstarch
You mix it all together and keep it stored at room temperature for quite some time. Most recipes do not call for more than a few tablespoons of this mixture at a time.
