We still have Christmas and I am not trying to skip over it with thoughts of the new year but it is natural for me to start thinking about a new year and a new set of goals or challenges for myself. In doing so I have made a decision to eat 6 weeks of vegetarian meals and do a proper cleansing of my body. After surgery and all these meds I need to clean out the old system and get back to normal. I am going to do it by eating organic, vegetarian and low fat meals. I am also going to cut the sugar again to get a handle on the "yeast" issues that come from so many meds. Over the past month or so I have been collecting some resources to help me in this...
Month of Meals: Quick & Easy Menus for People with Diabetes - Vegetarian Pleasures issue
The Vegetarian Way: Total Health for you and your family - Virginia Messina, MPH, RD & Mark Messina, PhD
Two from the Moosewood Restaurant collection - Mollie Katzen
You Don't Have to Be a Treehugger to be a Vegan: Eating is healthy for everyone - The 30 days to leave your blubber program - Dan Vishny (somewhat helpful but pretty weird)
Vegetarian Cooking for People with Allergies - Raphael Rettner, D.C.
Several of the Lorna Sass books on whole grains and pressure cooked foods, too.
So, there has been a challenge from my friend Christine to make up 6 weeks worth of menus and follow them starting in the new year. Today I am going to start working on that during my menu planning time for next week. I have also decided that vegan is not where I want to start but an ovo/lacto vegetarian diet but I won't be drinking milk because it makes my tummy wonky - seems I have a lactose intolerance issue as of late. I can have yogurt and kefir, though and will readily eat that with my homemade granola, fruit and such. I also love, love, LOVE a good egg for breakfast so those get to stay. ;)
Some online resources I will be using are...
Vegetarian Food Pyramid
Serving sizes...
Dietary Guidelines
So, on with the planning...
more to come...
I'm going to be doing something similar to begin my new year. I too have some on-going yeast issues and have decided to get them under control. (So what I do? Have a sugar laden cookie exchange! LOL!) I have Mollie Katzen's Enchanted Broccoli Forest and a wonderful little book called The Benevolent Bean that I'm using. I also have a vegetarian (Seventh Day Adventist) friend who has given me a couple of great books.
