Pictured is the vegetarian version but all you have to do is add cooked ground beef or roasted or grilled chicken strips and you have a full meal.
This one was made with walnuts I chopped in a food processor with some cumin and chili powder for flavor. I sprinkled the walnuts over a bed of Romaine lettuce, roasted corn, avocado, tomato and you can add cheese to it, too. It is fabulous with salsa on top. I have also known people to use Green Goddess or Catalina dressings, too. My favorite is a homemade Buttermilk dressing with a little salsa mixed in and we call it Mexicali Dressing. It works for me!
