Monday:
Baked Salmon
Couscous
California Mixed Vegetables (broccoli, carrots, cauliflower)
Fruit salad (strawberries, banana, grapes, kiwi, blueberries in pineapple juice)
Tuesday:
Sweet and sour chicken
brown rice
stir fried veggies
Wednesday:
Corned Beef (for the family - I cannot have this with the nitrite reaction thing)
mashed potatoes
peas and carrots
(I am eating vegetarian on this day - not sure what yet.)
Thursday:
Lasagna with ground turkey instead of ground beef
broccoli
mixed fruit
Friday:
Vegetable soup
cornbread
brownies for dessert night... :)
Got a full week of study, labwork and tests so I am scarce again.

Your menu sounds delicious Leann! I couldn't see it in IE, so I had to switch computers and load Firefox (displays perfectly!).
ReplyDeleteI bought some ground turkey recently and haven't ventured into things like lasagna or meatloaf or even spaghetti with it yet. Just been making turkey burgers! I need to get serious about substituting it for red meat.

ReplyDeleteThanks for visiting my blog! I've got the recipe for Dorito chicken over there now. You know, I sub ground turkey for ground beef a lot, too! Especially since it often goes on sale BOGO, LOL! (BTW, the vegetable soup sounds delicious. I make my mother's recipe and the kids just love it.)
