What does one do on a snow day?

We do not get a ton of snow where we live so the first thing I do is take some pictures to document it.  I probably share that documentation on Facebook for those who will never believe me without proof.  Hahaha

We are literally living in a Winter Wonderland today.  It has been coming down since about 6:00am... without stopping.  The kids are all getting out of school within the next hour or so and Dan is making his way home.  He is picking kids up as he makes his way here.

So, what does one do in this weather?

Maybe a bit of laundry to start the day.

I did make a run to deliver some food to a friend early this morning.  People here drive crazy in this weather.  It does not help that visibility is poor today but when you try to give them a wide berth and they are still ugly and try to push you off the road... well, what is a person suppose to do?  He did not kill me but one guy tried to freak me out.  I stayed the course and out of his way and hopefully, he did not kill someone else in his attempt to be a narcissistic road hog.

I came home to snap some photos and start a fire but as the snow has piled up higher and higher I have been randomly snapping more photos.

I have been doing a Plan To Eat video tutorial with Kat Lee over at Inspiredtoaction.com this week.  She has had a new session every day to teach us how to use the Plan To Eat system.  It has been very informative.

I have been spending time this week setting my new account up and plugging in recipes and menus and it has already been a huge help in making my week smoother.  If you want to be able to use your own recipes but still benefit from an online planner and shopping list then I highly recommend this system.  I have tried other systems but they send me THEIR menus and I never use all they send me because I am constantly substituting my own menus and recipes instead.  This lets me try new things but still use my old standby recipes and favorites in an organized convenient fashion.  There is even a button you can place in your bookmark bar at the top of your page and save new things you find as you roam around the internet, too.  It is an amazing system and very affordable!  Click on the link in my sidebar to learn more and, if you are so inclined, sign up for your own account.  It is SO worth it!

I am also plugging away at integrating the Bullet Journal system into my life more and more each day.  I talked about it back in October and I am still using it.  It makes my brain very happy to just have everything in one place all the time.  I have been updating and plugging in some new stuff today as I am working around the house and on the computer.  I have a few study notes I still need to add.

The inside is a catch-all for lists, reminders, quotes/scripture verses, notes, and planning my life in general.

The outside is a Moleskine purple thing of beauty!

It is my brain.

I am also boiling a chicken today...

There will be chicken and dumplings to warm my cold family tonight.

I am not sure what tomorrow will look like.  One never knows in the desert whether the sun will come out and all traces of a snow day will vanish so, we are taking advantage of it today.  The children will go out and try to play in it until they are too cold and then they will track muddy messes in but I don't care.  I can clean it all tomorrow.  I am a lover of snow and snow days because they are few and far between in this part of the world so we will enjoy it in all it's splendor until it is no more.

Gilmore girls love the snow and I love them and snow!

A week's worth of meals... for less than $100.00

If I have not shared this before (my facebook people have heard this for sure) we are living the Dave Ramsey's Money Makeover.  That means that we are scraping and pinching every tiny bit we can to get out of debt as quickly as we can.  One of our biggest issues upon evaluating what we spent was our grocery budget.  We have taken that to heart and changed our ways... mostly.  LOL  Being a foodie I tend to like odd little treats in the way of food and drink when I can get it but I am learning to delay gratification in this realm.  I did buy a chocolate soda and a bag of gnocchi the other day but for the most part I have been a really good girl the past few months.

With culinary school and crazy work schedules I have been neglectful in the sharing of menus that we eat at home so I am going to start putting more of that here again.  So, without further adieu...

This week's meals include:

Taco Salad - lettuce, ground meat, tomatoes, avocado slices, grated colby/jack cheese, salsa, red onion or green onion and it all goes on a bed of tortilla chips.  YUM!

Whole wheat waffles with pecans and homemade strawberry or blueberry syrup and a side of Vermont Maple Syrup Sausage.

Beef Lasagna with broccoli and garlic toast

Chicken Fried Steak and homemade mashed potatoes with a big side salad and dessert is peanut butter pie for a birthday boy's complete favorite meal on Saturday evening!

Baking a cake for church dinner and cutting up fruit as a side and this will all go with everyone else's contribution to the meal

Grilled Chicken with veggies

Roasted Pork Tenderloin (on sale this week and gonna get two big meals out of this one) with rice and veggies

Breakfasts include homemade granola with yogurt or milk, breakfast egg burritos, a variety of hot cereals, toast and fruit.  We do not eat cold cereal in our house anymore... WAY too pricey for the budget.

Lunches are usually leftovers, big salads or sandwiches and there is always fruit for snacking.

Another key to making sure you stay under budget is to check the sale fliers and circulars and STICK TO YOUR LIST... do not buy something that is not on it.

So, that is what a week of meals looks like in our house.  Sometimes there is more vegetarian stuff and in hot summer months lots of cold meals are a hit.  In the winter there are lots more soups and comfort type foods.

If you need a little help getting started there is a great resource on the left-hand side of my blog.  It is a link straight to E-mealz.com and it gives you a week's worth of meals at a time and a shopping list to keep you on track.  Once you get the hang of it you can do it yourself but it is a great way to start off and get it under control quickly.  Go check it out!  :)

I really did make a menu plan this week...

Monday - I had planned cabbage rolls and it wound up being grilled cheese sandwiches for the kiddos while Dan went to his monthly reading group and he had dinner there.  So, we put it off for another day.

Tuesday - leftovers of beans and rice, grapes, quesadillas

Wednesday:  Chicken drumsticks marinated in orange juice concentrate mixture and seasoned with salt, pepper and paprika and baked with salad, rice and green beans

Thursday:  cabbage rolls moved to here and served with quinoa, salad and carrots

Friday:  Soft tacos with lots of fillings

Sunday:  Church Dinner - I am probably making mac and cheese, big salad and a dessert to take.

Another option for menu planning...

I shared yesterday about one way I have menu planned. Another way I have used when our budgets are very tight is to check the local sale circulars and then build menus around what is on sale. I will alter my menu if I find a fantastic deal on something once I get to the store, too. How this would work using my current fliers...

This week drumsticks are on sale for 10lb for $10.00... I would make my drumsticks with orange juice and cayenne pepper with this.

There are also bell peppers on sale so I would get those for stuff bell peppers or for fixings for pizza and salad or stir-fry.

Pork is on sale... many varieties so I might purchase some chops for a chops and rice dish with applesauce or a pork loin for a Sunday treat.

a variety of fruits on sale would warrant smoothie ingredients and maybe a fruit salad.

Potatoes would be lovely for chowder or a Salad Nicoise.

Eggplant would bring a luscious ratatouille or an eggplant parmesan.

See how this works?

You can also buy to freeze for several weeks meals like ground beef or turkey...

this would bring meatballs or meatloaf or filling for those stuffed bell peppers or any variety of casserole of pot pie.

All this to say don't forget the flyers when you are making your meal plans. :)

Back to menu planning...

I SO needed this today. Home Sanctuary shared a post on menu planning today and it was the same system I was doing and now I need to get back to it so today I am working on this project....

I start with 7+ main categories of food

Soups/Sandwiches
Crockpot
Breakfast for Dinner
Ethnic Foods
Comfort Foods
Seafood Meals
Gourmet Meals
New Recipes to try
Leftovers

Then I write down meals or main dishes in each category... about 3 to 5 will do.

Soups/Sandwiches or breads - tomato soup/grilled cheese, corn chowder/cornbread, vegetable beef stew/savory muffins, lentil stew/veggie sandwiches, chili/chips/cheese (frito pie)

Crockpot -lentils and rice tacos, mission chicken, salsa chicken, chili, Ragu sauce for spaghetti

Breakfast for Dinner - waffles, pancakes, quiche, biscuits and gravy, egg casseroles

Ethnic Foods - curried chicken, spaghetti w/meatballs or meat sauce, pizza, lasagna, chicken enchiladas, chili rellenos, lamb stew, soft tacos, fried rice, stir fry, shepherd's pie, Chicken Tetrazzini,

Fish & Fowl (non-ethnic) - Chicken & Dumplings, Roasted Chicken, Tuna patties, Crab cakes,

Childhood Favorites - meatloaf/mashed potatoes, Macaroni & cheese, Chicken pot pie,

Vegetarian Fare - beans and rice, ratatouille, will be adding to this as I go along this year...

New Recipes to try - will be searching cookbooks from my library for this over the coming days and months - I will most likely be trying new stuff on Fridays and Saturdays.

Leftovers - self explanatory I think... One day a week we clean out the fridge.

The next step is take a calendar and plug these meals into days of the week where they would be most helpful or easiest to make. Take into consideration all the stuff you do each day and plan accordingly. Then you have a few months of meals and now all you have to do is make your shopping list for the week and you are ready to go.

This will get updated later on as I add more stuff and I will be getting them onto a calendar later tonight.

Tuesday: Baked potatoes and salad
Wednesday: Taco Salad
Thursday: Crock pot stew with cornbread
Friday: Pizza
Saturday: Leftovers from the week

Did it again...

Yep, I skipped posting a menu plan even though I made one. I am such a slacker! LOL Here we go...

Monday was beef stroganoff with veggies and pasta
Tuesday was chicken, broccoli, grapes and bread
Wednesday is chicken and dumplings made with the leftover chicken and broth
Thursday is sandwich night and maybe leftovers if they are available
Friday is dinner and a movie with homemade pizza or a lasagna - whichever I feel like making at that point.
Saturday is "clean out the refrigerator day"

Not being very creative lately but life is so busy. I am hoping to get to a theme soon and post some recipes. Don't hold your breath, though. LOL

Love to you all!!!
