This is what I do when I have a mishmash of veggies and stuff that need to be used up. I start with a bed of lettuce and then I start cutting stuff up that can be eaten raw.
Today it was tomatoes, carrots, zucchini, yellow squash and red onion.
I threw together a quick "Buttermilk" dressing made with sour cream and milk with some salt, pepper and garlic in it to give it a kick and that is dinner.
I had a few triangles of a quesadilla with it on the side.
