The kindness of others...

It has come to my attention that I have been awarded the Excellent Blog award by Retro-Food.com. I would just like to say thank you for thinking of me. I am honored to have been thought of so kindly. :)

My role at this juncture is to now choose to pass it along to some of my favorite excellent bloggers. Some of these may have already received the award and I apologize for duplications of any kind but these are, in my opinion, excellent blogs.

One Weigh or Another - a weight loss blog packed with encouragement, challenges and great food ideas.

Blog From Our Kitchen - Family food blogging

Happy Foody - Raw and Vegetarian adventures

The Left Over Queen - just one of my favorite foodies

Vegetation Ramblings - soy free vegetarian... and since I am allergic to soy I love her!!!

Andrea's Recipes - lovely delicious food with a sustainable twist.

Tastes Like Home - Beautiful lady, beautiful food and beautiful blog.

The rules are (and I have copied them word for word from Retro-Foods)...

1. You are supposed to go choose 10 blogs of any kind that you deem most excellent (I don’t mind if you pick a few more or less than ten, BTW, but ten is the official number from what I gather).

2. Oh, and you are supposed to post about them, linking to me and to them;

3. And please let me know when you have done it! Thanks!

Why you really come here...

Here are those recipes from the Bake-Off - you can see the pictures and results here.

Sweet and Spicy Pumpkin Seeds

Makes 1 cup (I made a double recipe for the cake)

5 Tbsp sugar

¼ tsp salt

¼ tsp ground cinnamon

¼ tsp ground ginger

Pinch of cayenne pepper to taste

1½ Tbsp canola oil

Preheat oven to 200°. Line a baking sheet with parchment paper. Heat shelled seeds for just a few minutes.

In a medium bowl combine 3 tablespoons sugar, salt, cumin, cinnamon, ginger, and cayenne. Heat peanut oil in a large nonstick skillet over high heat. Add pumpkin seeds and remaining 2 tablespoons sugar. Cook until sugar melts and pumpkin seeds begin to caramelize, about 45 to 60 seconds. Transfer to bowl with spices, and stir well to coat. Let cool. These may be stored in an airtight container for up to 1 week.

Cream Cheese Frosting

1 3-ounce package cream cheese

¼ cup butter

1 tsp vanilla extract

2 cups sifted powdered sugar

2 Tbsp orange juice

In a mixing bowl beat together cream cheese, butter and vanilla until light and fluffy. Gradually add powdered sugar, beating until smooth. Spread over cooled cake; sprinkle with chopped nuts or seeds (see my recipe above for sweet and spicy pumpkin seeds). Cover and store in refrigerator. I made approximately 3 batches to cover the entire cake and fill.

Pumpkin Molasses Cake

3 cups freshly milled soft white pastry flour

2 tsp grated orange peel

1 tsp baking soda

½ tsp salt

½ tsp ground cinnamon

½ tsp ground ginger

½ cup butter

1 ½ cups packed brown sugar

2 eggs

¾ cup buttermilk

½ cup canned pumpkin

¼ cup molasses

Preheat oven to 350 degrees F.

I double this recipe for the following.

1. Grease and lightly flour two nine inch rounds. Place precut 9-inch parchment paper rounds in the bottom of pans and then lightly grease and flour that, too.

2. Combine the first 6 ingredients. Beat butter about 30 seconds.

3. Add brown sugar and beat until well combined.

4. Add eggs, one at a time, beating 1 minute after each.

5. Combine buttermilk, pumpkin, and molasses.

6. Add dry ingredients and buttermilk mixture alternately to beaten mixture, beating after each addition.

7. Pour batter into pans about half to a little more full.

8. Bake in a 350 degree oven for about 40 to 45 minutes or until done.

9. Cool on a wire rack.

10. Cut each round in half and begin layering and filling each layer with cream cheese frosting. Stack each round on top filling each layer as you go.

11. Once the cake is stacked frost the entire cake and then garnish with pumpkin seeds around the entire outside edges of the cake. Sprinkle some seeds on top and then finish with more frosting in a piping bag to make clean bottom and top edges.

Chip, Walnut, Chocolate Cookies

1 cup butter

1 1/2 cups brown sugar

2 eggs

2 tsp. Vanilla extract

1/2 tsp salt

2/3 cup cocoa

3 cups freshly milled soft white pastry flour

3/4 tsp baking soda

1 cup semi-sweet chocolate chips

1 cup white chocolate chips

½ to 1 cup chopped walnuts.

Steps:

1. Preheat oven to 350 degrees.

2. Cream butter; add brown sugar and eggs. Mix in vanilla, salt and cocoa.

3. Stir in flour and baking soda. Add all chips and walnuts.

4. Form into cookie dough tube shape and roll in parchment paper.

5. Refrigerate an hour or so, overnight or until needed.

6. Slice into thickness desired and place on cookie sheet to bake.

7. Bake 10-15 minutes depending on thickness. The thinner the cut the shorter they bake.

8. Cool 1 minute before taking from cookie sheet.

This recipe makes about 5 dozen cookies.

The Bake-Off Results...

This was a local ACF sponsored baking event. I entered in two catagories - cookies and cake.

I went with NO expectations because it was my first time in such an event. There were activities for the kids and they made little graham cracker houses and smiley face cookies and got to eat lots and LOTS of sugar. LOL They had such a fun time...

We got to the end of the day and things were being announced. You know how you hope your name is called but if it is not you know that will be fine? Well, MY NAME WAS CALLED!!!!!!!!!!! WOOOOOHOOOOOOO....

I took 2nd place in the non-professional cake catagory with about 25 to 30 entrants.

I got some really great feedback from two of the chefs on how I could have tweaked it a bit more. I am SO THRILLED!!!!!!!!!!!!

Oh, and here is Davy's creation!!! I LOVE MY KIDDOS!!!!!!!!!!!!!!

I promise all the recipes once life has settled down again. We have a concert tonight, a full day of church and finishing an assignment for class and then packing for the week with my parents. More later...
