This is basically a mint Oreo cookie crust (made from scratch), chocolate pudding (or chocolate pastry cream and whipping cream filling) and then the whipped cream topping. There are so many variations on this but I make one without the creme de menthe for families with little kids. The one with creme de menthe is quite yummy, though. This pie is great for Christmas or St. Patrick's Day or any time of the year. It is minty and chocolate. YUM!
