My Autumn Breakfast Hash Recipe


This is my "go to" breakfast for the weekdays.  I make a large batch of it upon the weekend or Monday mornings and have it every morning for breakfast when I have to be out the door for work.  I will talk you through it here with photos if you are interested in making it, too.  It is paleo and gluten free.  I eat it with an egg on top most days.


I use 20 ounces of a ground meat
one medium sweet potato 
(you could also use carrots or butternut squash), 
a large gala apple 
but you can use whatever apply you like, 
cinnamon, 
salt, 
pepper,
 and nutmeg.  
I also add a green vegetable most weeks but don't have that available for today.  
I use spinach or chopped Brussel sprouts typically.


The first thing I do is preheat my cast iron pot that I make it in.  
Never add oil to a cold surface when cooking.  
You want cold oil on a heated surface.  
Here is the pot I use and I am using olive oil for this batch 
but I also use coconut oil when I feel like it, too.


Once your pan is heated and oil is in then you can add your lean ground meat of choice... 
ground turkey, chicken, pork, lamb, buffalo, or whatever you prefer.  
I use 20 ounces for my weekly batch.  Brown your meat...


While the meat is browning I chop the sweet potatoes.  
You see that I use my knife to peel my potatoes 
but if you really prefer a peeler then do that.


I do a smaller cube on mine so they cook really quickly.  
You could also grate them if you like.


Here they are cubed and ready to go in


Once the meat is browned I add the sweet potato.  
I add about 1/2 cup water at this point to kind 
of "steam" the potatoes to cook them faster.


Let that cook and simmer and cut your apple while it cooks.  
Again, cut smaller pieces to cook quickly.  
They soften nicely in this recipe.


Finished apple ready to go in...


Add the apple in and continue to stir and let simmer.


I would then proceed to add the green veg if you are doing that.  
I chop everything into smaller bits to be stirred throughout.

Once all the meat, veg and apple are in then you can add the seasonings.  
I add cinnamon to taste, salt, pepper and then grate some nutmeg in.


I use a really cool little nutmeg grater from Microplane.


Stir and simmer until all the veg and apple are soft and well incorporated.


About 1 cup of the hash is a serving.


I usually cook an egg sunny side up and add it on top for extra protein.


I love that I can cook this ahead and then just warm what I need each morning.  
It is great for batch cooking sessions.

Whole30 Day 4... No one died today!

 So, today I did not kill all the things....  LOL  

I only had one big outburst when everyone was invading my kitchen and I felt a bit overwhelmed by all the crazy.  I am hoping for an early bedtime.  

I spent the day working on some things around the house and working on some food things to get me through the week.  

I made some paleo granola.  I used this recipe but left out the honey so it would be Whole30 compliant.  I boiled some eggs, cleaned out the refrigerator, made some more paleo Chicken Primavera from the new Whole30 Cookbook but I used cilantro and sent it more of a Mexican direction with it's flavors and then made some homemade breakfast sausage.  

I bought two pounds of ground meat... chicken and pork and then set to work adding some green chilis and some spices (all listed in the recipe linked above).  It was so easy I don't think I will ever buy the premade stuff again!

I used one of my scoops and my two stone pans from my Pampered Chef set to make beautiful round patties that are all about the same size and cooked evenly throughout.


We sampled one and they are so yummy!  Precooked and ready for the rest of the week.

Here is my food for today.  I ate an extra snack and had a Kombucha  today to help with the digestive issues.  (a bit of a treat with the compliant store bought one)  I think I got fewer calories in breakfast and lunch than I have on other days so I was hungry for that afternoon snack.  I am not allowed to weigh myself or my food for this.  I am suppose to have a protein and a healthy fat at each meal and snack.  I added some ghee to the potato for the evening meal because I needed that fat.  It was pretty good on a sweet potato.


I will try to remember to share some NSV (No Scale Victories) tomorrow... you are welcome to remind me.  LOL  I do forget stuff sometimes.

I have my meals prepared for tomorrow already because I have to head to work tomorrow and take all my food with me.  Preparation is the biggest factor in this whole eating plan.  I spend a lot more time thinking through all my meals.  I am sure it gets easier over time but right now it consumes a lot of time.

Homesteading Devotional E-Book... a review


I recently received an electronic copy of this charming devotional booklet.  Susie Shock is the homestead blogger over at Our Simple Farm.  The blog is loaded with lots of great tutorials, videos and encouragement for the modern day Christian homesteader.

This e-book contains 15 heartwarming devotionals complete with lovely photography, scripture verses, personal testimony, a closing prayer and a homestead recipe for each day.  Susie opens up her life and heart in each devotional to encourage us through the daily trials and tribulations of being a wife, mother, woman and homesteader in our modern day and age.  She is open and honest about her life and the things that God has brought her family through.  She is quite the busy woman but she takes time to be in prayer and spend time in God's word each day.  I love that she is willing to share the things that God is teaching her in this format.  Her book reminds us in simple daily devotionals that we are not alone.

The recipes she shares are not just for delicious comfort meals, breakfast treats, and desserts (although there are plenty of those... YUM!) but she also shares recipes for making items we use every day like toothpaste and cleaners for around the house, canning ideas, home remedies, and ideas for pampering one's husband.

If you are a Christian homesteading woman I think you will find this devotional a real treat.  It is downloadable in a PDF format that can be added to your computer or e-reader very easily for quick access.

Bread & Wine...

I know... I know.... I am MIA a lot lately.  Life is just that way right now but I had to come here and share a real treasure with you.  



I recently got this book in the mail to read.  It was an advanced reader copy that I requested because the topic was right up my ally.  I am not getting paid to tell you how wonderful this book is.... and it is truly wonderful!  I would never say it if it were not true.  It is about my most favorite things and it really touched me in a very personal way as I read it.  It is about food and family and friends and God...

It was written by Shauna Niequist 

(she has written several other books to date:  Cold Tangerines and Bittersweet)

It is about gathering around the kitchen and family table together.  It has everything I look for in a book.  It has stories about family and friends.  It has recipes to share.  It has gluten free and healthy food.  It has the occasional splurge with comfort foods and rich indulgences.  It has recipes that use real food... whole food... butter and wine even!  They are not complicated but they are beautiful and delicious.  I have made several of her recipes as I have been reading the book.  It is a deliciously delightful read about life and how bringing people to the table enhances that in a way that nothing else can.  

I think this says a lot to give you some idea of the beauty of this book...

Boy Scout Snacking...


We recently had our Popcorn fund raiser. I love the Kettle Corn microwaveable popcorn that I get through them. Nearly every kernel pops with their product and I love that, too. So, tonight, after a very long day of working and driving and just being with people we are settling in to watch an old Spaghetti Western called DJango and we are enjoying some Kettle Corn Popcorn and hot tea with it. Now, that is crunchy and culinary and just plain YUM!!!

First Night in Camp Casserole

  • 2 cups milk
  • 2 cans condensed cream of mushroom soup
  • 8 ounces uncooked macaroni
  • 2 6 ½-ounce cans chunk chicken
  • 6 ounces grated cheddar cheese
  • 1 medium onion, finely chopped
  • ½ green pepper, diced
  • Handful of parsley

Whisk together milk and soup to make a smooth sauce. Arrange remaining ingredients evenly in a buttered 3-quart bake and serve casserole and cover with milk mixture. Cover and refrigerate for a t least 8 hours. Bake covered casserole at 350 degrees F for about 75 minutes, remove from oven, and let stand 10 minutes. Serves 6.

If you’ve brought split and buttered rolls, a bag of washed and cut up celery and carrot sticks and a bag of tootsie pops for dessert, your first night’s meal is complete.

One Step Casserole

  • 2 ½ cups cooked meat mixture
  • Salt, pepper
  • 1 15 ounce can tomato sauce
  • 1 28-32 ounce can tomatoes
  • 1 ½ cups water
  • 8 ounces uncooked wide noodles
  • 8 ounces grated cheddar or Monterey Jack cheese

Sprinkle uncooked noodles in a baking pan and top with meat mixture, seasoning, tomato sauce, tomatoes, and water. Cover with foil and bake for 45 minutes at 350 degrees F. Remove from oven, take off foil, add cheese, and bake a few minutes more until cheese melts. Let stand 10 minutes and serve with Italian bread and a leafy salad. Serves 4 to 5.

Chicken Skewers with peanut sauce

  • 1 ½ pound skinless, boneless chicken breasts, cut into 1 inch cubes
  • 2 teaspoons ginger
  • Juice of 2 limes
  • Salt and pepper
  • Peanut sauce

Thread the chicken pieces onto bamboo skewers, leaving about 1 inch at one end. To make the skewers easier to handle on the grill, thread a second skewer through the same chicken pieces, parallel to the first. Place the skewers in a large ziplock bag (you may need to use more than one bag). Mix the ginger, lime juice, salt and pepper in a small bowl or saucepan until well combined. Pour into the bag with the skewers (divide evenly if using more than one bag). Zip the bag and shake to make sure all the chicken is coated with the marinade. Put the bag in a cooler until ready to grill the chicken. Marinate the chicken for at least 1 hour and up to 24 hours. Grill the chicken skewers over medium-high heat, 6-7 minutes per side, until cooked through. Serve with peanut sauce on the side for dipping, or drizzle sauce over each skewer. Serves 4 (make 2 recipes worth for family)

Peanut Sauce

  • ½ cup peanut butter
  • ¼ cup soy sauce (optional)
  • 2 Tbsp sugar
  • 2 Tbsp sesame oil
  • 3 Tbsp rice vinegar
  • ¼ to ¾ tsp cayenne
  • ¼ cup water

Mix all the ingredients in a small bowl until well combined. Makes about 1 ¼ cups sauce.

Dinner

Camp stew

  • Dried mushrooms
  • Barley
  • Lentils
  • Carrots
  • New potatoes
  • Sun dried tomatoes
  • Spices, salt and pepper
  • Water to cover about an inch or two above

Dumpling mix (see Leave No Crumbs)

  • ¾ cup flour
  • 4 tsp powdered egg whites
  • 1 tsp dried herbs de Provence
  • 1 tsp baking powder
  • ¾ tsp salt
  • ½ tsp paprika
  • Dash of cayenne pepper
  • 1 Tbsp oil

In a small pot or pot lid, mix the powdered egg whites, herbs, baking powder, salt, paprika, cayenne, oil, and enough dribbles of water to form a thick paste with the consistency of biscuit dough. Drip by spoonfuls into boiling soup or stew.

Cover tightly and cook 12-15 minutes without lifting the lid. When done, the dumplings should be fluffy, with no trace of raw-flour taste. Makes 4 adult sized servings (about 8 to 10 small dumplings

Taco Bake

  • 1 lb ground beef
  • 1 envelope taco seasoning (I make my own)
  • 1 16 ounce can refried beans
  • 2 Cups medium or mild salsa
  • 2 Cups shredded Monterey Jack cheese

Preheat oven to 325 degrees F. In a large skillet over medium high heat, brown ground beef until cooked throughout and drain skillet of fat. Stir in taco seasoning and mix well. Transfer mixture to a 9” square baking dish. Spread half the can of refriend beans over meat mixture in baking dish. Top with salsa and shredded Monterey Jack cheese. Bake in oven for 20 to 25 minutes, until heated throughout and cheese is melted. I will often top with lettuce, tomato and more shredded cheese once it comes out of the oven and has cooled a bit on the counter before serving. I will also serve it with chips on the side for dipping. This recipe serves 4 so I also double it.
