My Autumn Breakfast Hash Recipe


This is my "go to" breakfast for the weekdays.  I make a large batch of it upon the weekend or Monday mornings and have it every morning for breakfast when I have to be out the door for work.  I will talk you through it here with photos if you are interested in making it, too.  It is paleo and gluten free.  I eat it with an egg on top most days.


I use 20 ounces of a ground meat
one medium sweet potato 
(you could also use carrots or butternut squash), 
a large gala apple 
but you can use whatever apply you like, 
cinnamon, 
salt, 
pepper,
 and nutmeg.  
I also add a green vegetable most weeks but don't have that available for today.  
I use spinach or chopped Brussel sprouts typically.


The first thing I do is preheat my cast iron pot that I make it in.  
Never add oil to a cold surface when cooking.  
You want cold oil on a heated surface.  
Here is the pot I use and I am using olive oil for this batch 
but I also use coconut oil when I feel like it, too.


Once your pan is heated and oil is in then you can add your lean ground meat of choice... 
ground turkey, chicken, pork, lamb, buffalo, or whatever you prefer.  
I use 20 ounces for my weekly batch.  Brown your meat...


While the meat is browning I chop the sweet potatoes.  
You see that I use my knife to peel my potatoes 
but if you really prefer a peeler then do that.


I do a smaller cube on mine so they cook really quickly.  
You could also grate them if you like.


Here they are cubed and ready to go in


Once the meat is browned I add the sweet potato.  
I add about 1/2 cup water at this point to kind 
of "steam" the potatoes to cook them faster.


Let that cook and simmer and cut your apple while it cooks.  
Again, cut smaller pieces to cook quickly.  
They soften nicely in this recipe.


Finished apple ready to go in...


Add the apple in and continue to stir and let simmer.


I would then proceed to add the green veg if you are doing that.  
I chop everything into smaller bits to be stirred throughout.

Once all the meat, veg and apple are in then you can add the seasonings.  
I add cinnamon to taste, salt, pepper and then grate some nutmeg in.


I use a really cool little nutmeg grater from Microplane.


Stir and simmer until all the veg and apple are soft and well incorporated.


About 1 cup of the hash is a serving.


I usually cook an egg sunny side up and add it on top for extra protein.


I love that I can cook this ahead and then just warm what I need each morning.  
It is great for batch cooking sessions.

Planning for April Meals and Holidays

I cannot believe it is already the last Friday of March.  The week behind us has not been so stressful but with allergy season in full swing I have not been super productive.  I have, however, found some lovely links for you.  I am thinking about planning meals a lot this week.  I am also starting to think toward Easter and Passover.  We started the 1 Peter Study with Love God Greatly and I am continuing to read the Bible through and work through the If:Equip passages and videos to prepare us for Easter.  I have enjoyed my study time a great deal this week.  The more I study the more I want to study.  I have also been listening to some of the daily readings again on YouVersion.  I love that they have audio on many of the translations.  It is good to hear God's word read aloud.

I have spent some time menu planning for the month of April.  I am adding some categories to bring a little more creativity back to our system.  We will do a Pasta night, Asian night, Mexican night, Comfort Food night, Soup and Salad night, Vegetarian night and a CORD night.  CORD stands for Clean Out Refrigerator Day (got that from an old Once a Month Cooking book on the shelf).  I am trying to wean us down to one dessert night a week.  I am also trying to be more diligent in preparing things ahead for breakfasts and lunch.  I am going to add a day each week to make things for the freezer.

With all this talk of food most of my links are food related this week...

The standard things like muffins and waffles are easy enough to make ahead and freeze but here are a few more great ideas that I pinned this week.  I have some standard quick bread recipes that make great breakfast breads and I think adding a coffee cake (Overnight Coffee Cake) every now and then might be a really nice treat.  I want to make something that the kids can just take out of the refrigerator or freezer and heat up.  The less work for me in the mornings the better.  That way they don't have to wait on their arthritic mom to be moving quickly enough to feed them all.  They will be grateful, too!

We eat a lot of eggs so I thought this might be a great option for them... Egg and Spinach Quiche Cups - I would, personally, use whole eggs instead of just egg whites for this one.  I will be doing a test run on these soon.

Kat over at InspiredtoAction has mentioned that she does a bulk batch of burritos to freezer for her family so I took some time to look for a recipe to test drive soon.  This one is the one I like so far... DIY Frozen Breakfast Burritos

I thought if the burritos worked why not breakfast sandwiches so this will be happening soon, too.... Freezer Breakfast Sandwiches

There are days when my children just want a good thick smoothie to get them started so this is a great idea, too,  We can have Smoothie Kits ready to go in the refrigerator for them to drop in and blend.

Now, this idea might be a smaller serving than the kids would prefer but I have a jumbo muffin tin that might make it a better size for those teenagers.  I know my husband and boys are fans of oatmeal so this might be a great quick solution for those hurried mornings... DIY Freezer Oatmeal Cups

After all this work to prepare meals for my family I think I am going to need a little treat for myself once I get the chance to sit down for a few minutes.  A lovely Chai Tea would certainly do the trick.  I found a great recipe at Food52 for an Almost Instant Chai Recipe.

We have a slower weekend ahead and I have several books in progress that I am hoping to have some cozy time to enjoy.  Stuff in my "to read" stack for the rest of the month and forward...

I also have a great new resource I picked up to help me start to organize my personal recipes that I have written.  I have fallen in love with the Moleskine line of journals since I started my Bullet Journal last semester.  They have them for just about anything you can imagine from cooking/baking to music, wine, organizing, budgeting, etc...  Their website is a writer's dream!



I cannot wait to get started...

Shrove Tuesday and the French Crepe

We typically do pancakes every Sunday.  That is Dan's morning to do breakfast for the kids. He loads us up with pancakes before heading out the door to church each week.  This is one reason we choose not to do the standard pancake for Shrove Tuesday.  We make crepes with fruit and whipped cream and a breakfast meat on the side.  I use a recipe I picked up in culinary school but it is very similar to the one shared in this video and this video is a great one.  Joy of Baking is one of my favorite sites and if you have not visited there before I thought you might enjoy their videos and recipes.

*note - Shrove Tuesday, Mardi Gras, Fat Tuesday and Pancake Day are all precursors to Lent.... any reason for pancakes seems to be a good one.  LOL  Want more info on the holiday?  Check out this link.

Ending with a New Recipe... Banana Pumpkin Seed Muffins


I am always looking for healthy choices for breakfast and snacking for my children.  They love muffins because I can make a giant batch and freeze them.  Then we can bag up what they want to eat in their lunches or have a few thawed by the time they get home from school or up for breakfast.  This is the most recent new recipe I have made and I thought I would share it with you to finish off this month.  A new recipe just for you....


Note:  I did not have wheatgerm the day I made these so I just subbed whole wheat flour and it worked out fine.  They were great for breakfast!  I suspect you could also sub canned pumpkin for the banana and I might need to try that soon.

New Breakfast


I really do take a lot of pictures of my food.  I have not been convinced that it is a problem for me at this point.  I don't spend so much time on it that my food goes cold while I am snapping away with the camera.  You also need to know that I am not the only one in my family that cooks food.  The kids take turns sometimes and my husband is a far better cook than he ever gives himself credit for.  He grills and makes beans and cornbread and he is excellent at breakfast and camping food.  With that being said I cannot take credit for this particular recipe.  It is a secret recipe that my husband has floating inside his head somewhere.  He makes pancakes for everyone every single Sunday morning.  He has a formula for the regular pancakes and has recently started venturing into a more creative realm with blueberry pancakes, chocolate chip pancakes, S'more pancakes, banana pancakes, etc...

He loves me and so he has also mastered the art of gluten free pancakes for me.  He makes a little special batter just for me on the side every week.  For the past few weeks he has been making mine blueberry.  I looked longingly at the ones he made for Emily last weekend because he has started putting cocoa powder into her's to make them chocolate.  He loves her very much, too!  LOL  

So, this morning I came to the table and he had my plate ready and there were two absolutely beautiful CHOCOLATE GLUTEN FREE PANCAKES MADE WITH ALMOND MILK right there on my plate with a big cup of coffee sitting next to it.  

I am the most spoiled woman on the planet!

If I can get the recipe out of his head I will share with you.  I promise!

Buttermilk Biscuits

In the summers I have a house full of people from morning to nightfall.  With children home on school break I do a whole lot more cooking and baking throughout the day than I do at other times of the year.  Children typically make their own breakfasts during the school year.  I have things like bread for toast, cold and hot cereals for them to prepare, fruit, granola, yogurt, etc...  They can quickly put their own breakfast together on the go.

In summer, though, I will prepare a breakfast for us to enjoy together a few times a week.  One of their favorite breakfast items is buttermilk biscuits.  This particular morning I thought ahead enough to snap a few pictures of the process for you.  The recipe is one I have shared on here before... here.

These days I roll all my pastry and dough items out onto cling film (Saran Wrap).  It keeps the counter cleaner and helps me to be able to flip the dough if the need arises.  It also keeps the rolling pin or my hands clean as I work when I use cling film on both bottom and top and keeps the heat of my hands from melting shortening or butter in the recipe.

I am also using my Pampered Chef Bar Pan every single day now and it is perfect for a big tray of biscuits.  It cooks them thoroughly on top and bottom and gives them a golden loveliness.


I double the recipe for a full two dozen and they don't last past breakfast... my children are piggies!  LOL  I serve them with either homemade cream gravy, syrup, honey or jellies and jams.


Buttermilk biscuits do more for me than fill the stomach... they take me back to a simpler time in my life when my Meemaw made them for us and served them with homemade plum jelly.  If there was no jelly to be had they were simply slathered in butter and a little pure cane sugar was sprinkled over the butter.  A truly wonderful memory from my childhood.  

Food does that.... it is so connected to our history and memory.  

I love that something so little can be so powerful.  

The simple biscuit... brings a flood of memories.  With each bite there is the little diner table in an old open kitchen with red benches and an uncovered light bulb hanging above it.  A one basin farmhouse kitchen sink and cabinets with glass panes in the doors so one could see the Fiestaware dishes that were housed there.  The old style washing machine used as decoration sat next to the stove.  Little wooden portable cabinets with treats such as honeybuns or little jars of plum pudding in them just for the grandchildren sat in the corners on either side of the entrance door.  A large chest freezer full of homemade items put away for feeding the family when they visit sat next to the refrigerator.  The refrigerator had small bottles of Coca Cola in the door for enjoying with our sandwiches and Fritos at lunch when we were there.  There was also an old water heater in the open with cute little vintage magnets on it.  Those magnets now live on my modern refrigerator.  

All of this... from one bite of a biscuit shared with my children.

Shrove Tuesday....


We celebrated tonight with crepes, fruit and sausage...

 Homemade whipped cream... using whipping cream, sugar and some vanilla

 No matter how much sausage we make it is never enough.  LOL

Crepes

These are fresh peaches from our backyard orchard... 
we made a cobbler from some and then had a few leftover for breakfast the next morning.  
I decided on crepes.  
I cooked the peaches and sugar down and then used them as a filling for my crepes.  
I drizzled a little of the peach syrup over the top.

and I washed it all down with coffee.  
This is a charming little mug I got on my honeymoon 23 years ago.  I love the flowers... they are called Columbines and they are the state flower.  

I am thinking there might be crepes again soon... and this time I am thinking berries.  They are also fabulous as a dessert if you just add ice cream or whipped cream along with the macerated fruit.

You do not have to make crepes with sweet fillings... they are also amazing with chicken and mushrooms and a lovely Veloute sauce.

Blueberry Syrup...

I love making fruit syrups...

they are simple and delicious and they add a little nutrition to the plate, too.

LOL .... a little

I start with pureed fruit - 1 to 2 pints of blueberries or strawberries
1 to 2 cups of sugar
1/2 a cup to 1 cup water
a squeeze of lemon
2 Tbsp corn syrup

Bring it all to a boil and let it cook down to thicken a bit.

Then, I finish it off with 2-3 pats of butter and then strain and serve warm over French toast, pancakes or waffles. It is a Saturday morning staple in our house

Dinner...

It has been some time since we had German Pancakes but since we have had that multitude of apples I thought it was a good time to have them again.  The recipe we used tonight is from the All Recipes.com website.  This one is called simply German Apple Pancake.  

During this apple season you should give this a try.  It makes a great breakfast, dinner or a simple dessert with a scoop of ice cream on top.  YUM!

Weekend fun...Coffee Cake and a Recipe Card Holder


Sour Cream Coffee Cake

Makes 2 9-inch round cakes


24 ounces sour cream

2 cups sugar

2 eggs

3 cups dried fruit

4 cups flour

4 tsp baking powder

1 tsp salt

Topping

2 cups walnuts chopped

1 cup brown sugar

2 tsp cinnamon

½ cup unsalted butter

Preheat the oven to 350 (375 for higher altitude)

Grease 9 inch spring form pans

Combine the sour cream, granulated sugar and egg

Stir in the dried fruit

In separate bowl, combine the flour, baking powder, and salt

Add the flour mixture to the sour cream mixture and stir thoroughly

Scrape into prepared pan. Smooth surface and sprinkle evenly with the walnuts, brown sugar and cinnamon. Dot with butter

Bake for 1 hour or until a wooden skewer tests clean

Let cool 10 minutes before unmolding.
